Nut Butter Chews...Easy, Healthy Treats

Cashew Butter Chew...so yummy!


One of my favourite websites Oh She Glows always has yummy and healthy recipes for its readers.  Now, I don't usually stick straight to any recipe, as I like to experiment.   The following is no exception.  PLUS, often I don't have every exact ingredients on hand so improvisation is a necessity.  Yesterday I made a version of Oh She Glows's Almond Butter Chews.

Nut Butter Chews (adapted from Oh She Glows)




1/4 cup all natural nut butter (I used cashew butter for one batch and peanut butter for the other)
1 tsp pure vanilla extract
1 c puffed millet cereal (millet is trés healthy so this boosts the nutritional value of the recipe)
3 T barley malt
1-2 T of chopped chocolate (I used unsweetened)
2 T of chia seeds (I have also used sesame seeds and hulled hemp seeds in the past with great success)
2 T shredded unsweetened coconut

Mix and microwave (35-45 seconds) the nut butter, barley malt, and vanilla. Stir and add the rest of the ingredients.  Using wet hands, form balls and place them on a plate covered with parchment paper (which I LOVE). Freeze for 5 minutes before storing in a sealed container.  These keep in the freezer, and can be enjoyed straight from it or microwaved for a few seconds.
